doc: Change some occurrences of "the GNU system" to "Guixotic".
* doc/guix.texi (GNU Distribution): Explain what "Guixotic" is.
(System Installation): Replace "the GNU system" by "Guixotic".
(System Configuration): Likewise.
(Invoking guix system): Likewise.
